A Harvest-Inspired Recipe: Roasted Maple Buttercup Squash

This dish brings together the best flavors of fall: sweet, savory, and a little bit cozy.

Ingredients:

  • 2 buttercup (or acorn) squash, halved and seeds removed
  • 3 tbsp Hilltop maple syrup
  • 2 tbsp butter, melted
  • 1 tsp cinnamon
  • 1 tsp Humphrey's Sap Sucker
  • Pinch of nutmeg
  • Sea salt to taste

Instructions:

  1. Preheat oven to 400°F.

  2. Place squash halves cut-side up on a baking sheet.

  3. Brush with melted butter, drizzle with maple syrup, and sprinkle with cinnamon, nutmeg, and salt.

  4. Roast for 40–50 minutes, until the squash is tender and caramelized around the edges.

  5. Serve warm as a side dish — or scoop it out and mash it for a velvety fall purĂ©e.
